SUMMER LEMON BARS!





INGREDIENTS:

+ 1/3 cup butter (softened)

+ 1/4 cup sugar

+ 1 cup flour

+ 2 eggs

+3/4. cup sugar

+ 2 T all purpose flour

+ 2 teaspoons shredded lemon peel

+ 3 T lemon juice (fresh lemon is my favorite)

+ 1/4 teaspoons baking powder




DIRECTIONS:

Preheat the oven to 350. In a mixing bowl beat the 1/3 cup butter and 1/4 cup sugar together. Add one cup of flour to the mixture until it looks crumbly. Spray an 8x8 pan and press the mixture into the bottom. Bake the crust for 15-17 minutes at 350 until golden brown.


While the crust is baking, it's time to make the filling! Mix together the eggs, the 3/4 cup sugar, the 2 T flour, lemon peel and juice, and the baking powder. Mix. After the crust is done baking, pour the lemon mixture on top. Bake for 18 minutes at 350. Once cooled, you can top lightly with some powdered sugar! Cut into squares and enjoy! The perfect summer treat.
